Food Safety Trends
Like all raw agricultural products, meat and poultry contain bacteria. Most of it is harmless. But in some rare cases, pathogenic bacteria can be found and this is the kind of bacteria that can make some people sick. As a result of industry and government efforts, government microbiological sampling data show that overall, the incidence of pathogens on meat and poultry products is decreasing.
Likewise, Centers for Disease Control data show that the incidence of human illnesses associated with these pathogens is decreasing. Together, the incidence and illness trends show us that our efforts are working to enhance meat and poultry safety.
